We know that the in depth flavours of Claypots or ‘oven’ dishes are a flavoursome way to prepare and share meals over winter. Kemal adds a further element with his take on modern Turkish influences within these dishes by using the base spice ‘paste’ from his Lezzet restaurant which is the first recipe to be covered aswell as being used right across the Turkish menu in a plethora of dishes. Today’s class is focused on those wonderful winter favourites that are quick to make but slow to cook, including slow cooked lamb and capsicum paste, a whole spatchcock based in a claypot and even one for the vegetarians. Kemal will also show us how to make his Turkish style béchamel sauce that is a delightful top layer for slow cooked wonders, some chutneys and preserves. These make great accompaniments, add texture and bring life to your oven baked meals.
